Puree the raspberries and heat in a pan, mix the sugar with the pectin and stir into the raspberries. Bring to the boil and add citric acid. Rub through a sieve and set aside to cool.
Toast the rolled oats with a tablespoon of oil and sugar in a pan. Add the crushed cookies.
Place the cream cheese, honey and sweet cream in a bowl and whisk together.
